Chef Paul Vella was born and raised in Philadelphia. His grandparents came to the US from Malta and Sicily and settled in Philadelphia. In 1995, Paul moved to Charleston, SC to study and receive his Associate's degree in Culinary Arts and his Bachelor's degree in Restaurant Management from Johnson & Wales. Paul was a teaching assistant and Fellow at the University and received numerous awards. While in Charleston, Paul met his wife and business partner, Abigail, who has a Bachelor's in Business Management from Columbia College. With his Italian family traditions and his Philadelphia background, one of the first things Paul missed after moving to the Southeast was great Philadelphia food. Paul and Abigail started with a business plan in January 2007 and officially opened the restaurant in April 2008. Paul handles the day to day operation of the restaurant while Abigail handles all of the accounting and business management. They sincerely hope that the recipes that they knows and love will become favorites with all of their guests.
